  • Honeywood Farms – lead consulting for a 1,000-acre working ranch and farm including a café, farm store, and future regenerative community development.

  • St. Vincent Agrihood – consulting for a planned 55-acre regenerative community featuring 680 residential units, a 15-acre farm, café, farm market, boutique hotel, and wellness center.

  • Cowork Office - asset management of a 5000 square foot tenant co-working office space in Emeryville, CA

Dovetail Events & Catering

Full-service Organic Catering and Event Design Company specializing in culinary-driven experiences, production, and immersive environments

Role: Founding Owner, CEO

  • Operated from 2003–2018, produced and executed thousands of events ranging from intimate private dinners for distinguished guests to large-scale celebrations for 3,000+ attendees

  • Designed and delivered custom environments including bespoke furniture, décor, and large-scale experiential installations

  • Extensive work across weddings, corporate events, nonprofit fundraisers, and cultural gatherings, leading concept development, culinary execution, logistics, staffing, and on-site production

VERBENA

120 seat restaurant, cocktail bar & event venue in San Francisco, CA

Role: Founding Owner

  • Founded and operated Verbena before selling to internal investors in 2016, where it evolved into the current restaurant and tequila bar, Mezcalito.

  • Led concept development, funding strategy, financial planning, and startup execution

  • Directed and oversaw design-build delivery

  • Built and managed operational systems including program development, marketing, sales, and team development

Back to Earth

Founded in 2001, Back to Earth is a wilderness-based guiding organization offering immersive journeys for youth and adults to deepen connection with the natural world, build leadership skills, and mark meaningful life transitions.

Role: Founder (2001–2018); Advisory Board Member (present)

Eric sold Back to Earth in 2018. In 2025, the organization transitioned to a nonprofit model focused on youth rites-of-passage programming and leadership development, where he now serves on the advisory board.
